What's for Dinner? Baked Chicken and Pepper & Olive Pasta

Sorry no pics...I forgot.  This came out really good!!! It also has all the servings of veggies you need for an entire day. Whoooo hooo!


Baked Chicken

1/2 cup mayonaise
1/4 cup parmesean cheese grated
3 shakes oregano
2 shakes basil
2 shakes thyme
3 chicken breasts halved (about 1.5lbs)

1.  Preheat oven to 425degrees F.
2.  Put all ingredients in a plastic zipper bag and shake.
3.  Put chicken breasts in baking dish and bake for  20min or until juice is no longer pink, but clear.
4.  Cut chicken breast into slices or serve whole with below pasta.

Pepper, Olive Pasta

6 oz of pasta shells
2 tbsp olive oil
1 red pepper chopped
1 green pepper chopped
1 onion chopped
1 clove garlic chopped
1 can diced tomatoes with garlic
1 can medium pitted black olives
2 tbsp cream cheese

1.  Cook pasta according to package until al dente.
2.  Put olive oil, red & green pepper, onion and garlic in med to large dutch oven or very large skillet; cook for 5min or until tender crisp.
3.  Add tomatoes and olives and simmer for 15min without lid.
4.  Stir in 2 tbsp of cream cheese and serve over pasta.
